what-is-your-storyAs a young apprentice butcher, our founder Gary Quinton was taught the simple act of making a knot when tying off cuts of roast in the shop. This was marked by a period of time where all the tying was done by Gary to re-enforce what was learned. After about 30 days of work, he was provided feedback by the journeyman who was facilitating his apprenticeship and the feedback was a lesson Gary has never forgotten.

Gary’s father shared with him that the senior butchers were disappointed in his performance, and he was unsure if he could keep him on the payroll. With that, Gary’s father showed him a length of butchers twine long enough to be a brand new spool.

The length of this twine was marked by hundreds of little knots tied together. You see, for the month of time Gary was tying off roasts, each excess string that was cut by Gary was picked up and tied together to display the waste he was creating. He was again taught how to make a knot with no waste and challenged to do the task again.

The words that were said are still remembered:  “The margins of the meat business are thin. Efficiency at every step of the process must be built in everything we do. There is no room for waste in this shop.” With that, Gary quickly focused on tying knots with zero waste, and more importantly, learned a lesson he never has forgotten.
